Gastronomy, Innovation, and Sustainability
The Gastronomy, Innovation, and Sustainability concentration area aims to study the diverse food raw materials in the country, both traditional and non-traditional, and to develop various applications for these inputs. The focus is on conducting research in traditional technology while proposing new methods and techniques for gastronomic preparation to improve the quality of offerings. Additionally, this area promotes knowledge and documentation of local, regional, and national gastronomic culture. Regional development will be encouraged through a link between academia and society, enabling the creation and genuine appropriation of multi-referential knowledge. In this context, the studies will be conducted within the proposed lines of research: Social Gastronomy and Sustainability; and Gastronomic Technology and Innovation.
